Why serving recommendations vary
A pure cacao paste, a sweetened blend and a partially defatted product do not have identical compositions. A gram-based recommendation only becomes meaningful when you know what the product contains.
Start with the label, not a ritual number
Use the producer’s published serving instructions as the first reference point. If you are new to cacao or sensitive to caffeine-like compounds, smaller amounts may be more appropriate than jumping to a large ceremonial serving.
